Bachelor or Master thesis "Influence of preparation on bioactive polyacetylenes in carrots and wild plants"

Initial situation:

Polyacetylenes such as falcarinol and falcarindiol are antimicrobial compounds found in Apiaceae vegetables such as carrots and parsnips. These compounds are bioactive and also show cancer-preventive effects. The roots of the native mountain parsley, a wild plant, also contain such compounds.

The influence of preparation (crushing, cooking, ...) on these compounds and their reactivity have so far been only insufficiently investigated.

The aim of this work is therefore to investigate the stability and reactivity of various polyacetylenes in wild plants and root vegetables during preparation and processing and to compare them with those of isolated compounds.

Tasks:

  • Investigation of the stability and reactivity of polyacetylenes under model conditions
  • Investigation of the stability of polyacetylenes during processing and comparison of carrots and mountain parsley.
  • Quantification of polyacetylenes and identification of reaction products using LC-MS and GC-MS

The thesis is suitable for food chemists, food technologists, nutritionists and similar courses of study.

The work will be conducted at the Leibniz Institute of Vegetable and Ornamental Crops in Großbeeren. The IGZ is located south of Berlin.
